"Cookie dough" protein truffles

This easy and delicious recipe can be done with kids, who will love to participate in the preparation of these healthy sweet treats! 

Ingredients 
  • 1 1/2 cup cooked chickpeas, drained 
  • 1/4 cup Nature Zen Tahiti vanilla protein 
  • 1/3 cup nut butter (peanut, sunflower, almond, hazelnut...)
  • 1/4 cup dates (pitted)
  • 1/2 tsp molasses
  • A few pinches of stevia, to taste (optional)
  • 1/8 tsp salt
  • 1/4 cup unsweetened almond milk 
  • 1/3 cup mini dark chocolate chips 
  • 1/4 cup chocolate chips, melted (for decoration, optional)
  • A few chopped almonds (for decoration, optional)
  • Flower of salt (for decoration, optional)

Preparation steps 
  1. Put all the ingredients, including salt, into a food processor.
  2. While mixing, add progressively almond milk until it forms a dough ball.
  3. Transfer the dough ball into a bowl and add chocolate chips with a spatula.
  4. Cover the bowl with stretch film (or use a bowl with a lid) and put to freezer for 1 hour.
  5. After one hour, take the dough out of the freezer and make three balls of about 3 cm diameter.
  6. You can use a cookie scoop or simply take a portion of the dough, roll it between your palms until making a sphere (proceed rather quickly or the chocolate chips may melt in your warm hands !).
  7. Keep the truffles in the fridge in an air tight container, or place them on a cookie sheet lined with a parchment paper, and go to decoration step !

Decoration (optional)

  1. Melt the chocolate in a double boiler (or at low temperature, mixing with a spatula so it won't burn at the bottom). The consistency should be liquid, if not, you can add 1/2 tsp of coconut oil to thin it.
  2. With a spoon, drizzle melted chocolate in "zigzag" on each truffle, then decorate with some chopped almonds and a pinch of flower of salt.
