Choco-Orange Energy Truffle

Simply delicious!

  •  1/2 cup chopped pecans
  • 3/4 cup unsweetened shredded coconut
  • 3/4 cup date paste (see preparation)
  • 1/8 tsp. sea salt
  • 1/4 cup nature zen pure raw cacao organic rice protein
  • 2 tbsp. nature zen organic pea protein, smoothie & cooking formula
  • 2 tbsp. cocoa powder
  • 1 tsp. natural vanilla extract
  • 1 tbsp. whole chia seeds
  • 1 tsp. orange extract
  • zest of 1/4 of an orange, to garnish
Preparation steps 

1. First prepare date paste: soak overnight 2.5 cups pitted dates at room temperature. Next morning, strain and mix softened dates in a food processor, to reach a smooth and creamy consistency. This date paste will keep for 3 weeks refrigerated in an airtight container or 3 months in the freezer.
2. In a food processor, mix pecans and the shredded coconut until you reach a creamy nut butter texture (you may have to take pauses depending on your food processor strengh).
3. Add all other ingredients (excepted orange zest) and mix for several minutes. The idea is to get a uniform mix, but not liquid. the idea is to mix very well to obtain a homogeneous dark malleable dough.
4. With a melon baller or ice cream scooper, make balls of about 1 inch (2,5 cm) diameter, making small macaroons. You can also roll them in cocoa powder or dip then in your favorite chocolate! garnish with reserved orange zest. They will keep for 5 days in the fridge. you can also freeze them for over a month! simply let them defrost a little before serving. Enjoy!
