Coco-Mango Chia Delight Pudding

Fresh and flavourful! 



  • 4 tbsp. (35g) nature zen tahitian vanilla organic rice protein
  • 2 tbsp. (18g) nature zen organic pea protein, smoothie & cooking formula
  •  1 can light coconut milk (400ml)
  •  1.5 cup (375ml) almond milk
  •  2-4 tbsp. honey (optional, can sub. with maple syrup or a few pinches of stevia)
  •  1/8 tsp. ground cardamom
  •  zest of 1 lemon + 1tbsp. lemon juice
  •  1 tsp. vanilla extract
  •  5 tbsp. whole chia seeds



  •  2 cups ripe mango (fresh/frozen, defrosted)
Preparation steps 

1. In a bowl, whisk all chia pudding ingredients together very well. If fat from coconut milk floats on the top of the can, you can reheat your coconut milk to make it homogeneous before making the recipe.
2) Refrigerate pudding, covered, for a minimum of 2 hours and ideally overnight.
3) When ready to serve, make the coulis by blending the fresh/defrosted mango in a blender until silky smooth.
4) Share pudding between 4-8 ramekins and split mango coulis on top of each.

Keeps for 4-5 days refrigerated in an airtight container.
