Double Chocolate and Pecan Brownies

Rich, fudgy brownies... melting dark chocolate... crunchy pecan... 100% plant-based treat to support your whole body and mind with complete proteins!

  • 1/2 cup (50g) Nature Zen Organic Pea Protein, Smoothie & Cooking Formula 
  • 1/4 cup (30g) Nature Zen Organic Rice Protein, Pure Raw Cacao 
  • 1/4 cup (25g) cocoa powder 
  • 1/2 cup (45g) almond flour (meal)
  • 3/4 cup (150g) cane sugar
  • 1 tsp (3g) baking powder (chemical leaven)
  • 1/2 tsp (1g) baking soda
  • 5 tbps aquafaba (Aquafaba is the thick liquid from canned legumes such as chickpeas or the one that results from cooking legumes in water for an extended period of time. It is an excellent egg replacer!)
  • 1/4 cup (60ml) almond milk or other non-dairy milk alternative
  • 1/2 cup (130g) pumpkin puree
  • 1/4 cup (60ml) (neutral tasting oil (deodorized canola, sunflower,  melted coconut or even hazelnut for a deep, delicious flavor)
  • 1/2 tsp vanilla extract or powder
  • 1/4 cup (30g) chopped pecans (or walnuts, cashews, large coconut flakes, cocoa nibs, toasted sunflower seeds, etc. anything crunchy you like)
  • 1/3 cup (60g) dark chocolate chips
  • 1/4 tsp (1g) Fleur de sel (or 1/8 tsp unrefined salt of your choice)

Preparation steps 
  1. In a bowl, combine the pumpkin puree, oil, aquafaba and vanilla. Whisk until the mix is homogeneous. Set aside.
  2. In another bowl, combine Nature Zen peas protein, cocoa, almond powder, cane sugar, baking powder, bicarbonate of soda and salt. With a wooden spoon, incorporate the dry ingredients, not stirring too much. Add the milk and stir well.
  3. Add the chopped pecans and chocolate chips, then spread by stirring briefly.
  4. Pour the paste into an oiled square mould and cook in a preheated oven to 350F for 30 minutes.
  5. Let cool before serving.
