Double chocolate banana muffins

Un plaisir nutritif et décadent! 

  • 1 1/3 cup (195g) Nature Zen protein, Pure Raw Cacao
  • 1/2 cup (75g) almond flour (ground almonds)
  • 1/2 cup (60g) ground quinoa flakes
  • 2 tbsp (30g) cocoa powder
  • 1 tsp (5g) baking powder
  • 2 medium bananas
  • 8 egg whites
  • 2 tsp of lemon juice
  • 1 1/3 cup (333 ml) unsweetened almond milk 
  • 1 tsp vanilla extract
  • 1 cup (250g) dark chocolate chips

Preparation steps 
  1. Preheat the oven to 350F (170C)
  2. In a large bowl, using a spatula, mix the Nature Zen protein, Pure Raw Cacao, almond flour, ground quinoa flakes, cocoa powder, and baking powder. Set aside.  
  3. Using a fork, mash the 2 bananas, add the almond milk, mix well and set aside.
  4. Using an electric mixer, whisk the egg whites until light, airy and stiff peaks begin to form, add the lemon juice.
  5. Add the banana purée and almond milk mixture.
  6. Using a spatula, gently fold in the egg whites to the cocoa mix, making sure to preserve the airy consistency.
  7. Divide into the 12 muffin or bun cases and bake for approximately 23 minutes, or until a toothpick inserted into the middle of a muffin comes out dry.
