Nature Zen Sunny Pizza

This sunny pizza recipe helps to stay Zen, and to remind our body of the importance of warm, comforting, colorful food...


Pizza dough

  • 1 medium cauliflower
  • 1/3 cup (48 g) Nature Zen protein, Velvet Natural
  • 3 tbsp (40g) almond flour (ground almonds)
  • 1 tsp salt
  • ¾ tsp Provence herbs
  • 1/8 tsp ground fennel
  • ¼ tsp spiced pepper (or 1/8 tsp ground pepper) 
  • 1/2 tsp garlic powder 
  • 2 tbsp ground chia seeds 
  •  cup (60g) grated cheese (or vegan cheese as Daiya mozzarella)
  • 1 egg
  • 2 tbsp (30 ml) pizza sauce (or vegetarian tomato sauce) 


  • 1/2 cup (125 ml) vegetarian pizza sauce 
  • 1/2 cup (60g) grated cheese (or vegan cheese as Daiya mozzarella)
  • 1/2 red bell pepper
  • 1 cup (1 large handful) fresh spinach
  • 1/2 cup artichoke hearts
  • 1/4 cup dried tomatoes or approx. 6 half tomatoes (soaked in lukewarm water for 20 minutes), sliced
  • Other ideas: olives, fresh tomatoes, asparagus, mushrooms...

Preparation steps 
  1. Preheat the oven to 450 F (225 C). Cut the cauliflower flowers, wash and mix them with a food processor until a couscous texture (semolina) is obtained.
  2. In a large nonstick skillet, put 1-2 tbsp of water, cover with a lid and steam the cauliflower semolina, stirring from time to time.
  3. Cook for about 10 minutes. Let cool.
  4. Once the cauliflower preparation is cold, drain it thoroughly, press it in a cloth – cheesecloth or a filter for coconut milk. You should get around 1/2 cup of liquid.
  5. In a bowl, blend all the ingredients for the dough until they are well incorporated.
  6. On a parchment paper, with your fingers slightly wet, make a pizza dough of roughly 1/4 inch thick. Don't forget the raised portion for the crust edges.
  7. Cook in the 450 F (225 C) preheated oven until the crust is golden and crisp to the touch.
  8. Take out of the oven, add the sauce and filling cooked according to your taste (about 15 minutes). You can put the pizza under the grill for a few minutes if you wish.
  9. Serve with a nice colorful salad and enjoy! :)
