Protein Caesar Sauce

Delicious vinaigrette to accompany a nice green salad... The addition of peas protein to the vinaigrette will make a wonderful lunch, perfectly well-balanced...

  • 1 egg yolk
  • 2 tbsp lemon juice 
  • 2 1/2 tbsp (20g) Nature Zen peas protein 
  • 1/2 cup (125ml) canola oil 
  • 1/4 cup (60ml) olive oil 
  • 1/4 cup (60ml) vegetable cream (or else)
  • 1 clove of garlic, chopped thin 
  • 1/2 tsp (2,5ml) garlic powder 
  • 1/2 tsp (2,5ml) salt
  • 1/4 tsp (1,25ml) ground pepper
  • 1 tbsp (15ml) chopped capers 
  • 1/2 cup (50g) grated Parmesan cheese 
Preparation steps 
  1. With a whisk, blend together the egg yolk and lemon juice in a bowl.
  2. Add a thin drizzle of the mixed oils, and whisk them together vigorously until you get a mayonnaise consistency.
  3. Add the chopped garlic, garlic powder, salt, pepper, protein, and vegetable cream. Mix all the ingredients well. If necessary, adjust the consistency (with vegetable cream if too thick, Nature Zen peas protein if too liquid).
  4. Then incorporate the Parmesan cheese and capers.
  5. Serve with a salad of your choice.
